T SCHOOL RECIPE FOR MY PEEPS

Omelettes are the perfect meals for the Paleo diet. This omelette contains fresh spinach which is a great source of protein and very low in calories. I added 1 green chilli and 1 red chilli. It’s up to you if you want to remove the seeds or not depending on how hot you like it. The heat from the chillies also increases your metabolism. This omelette is quick and easy and is best served with a small side salad.

Cooking Times

  • Preparation Time: 5 minutes
  • Cooking Time: 5 minutes
  • Total Time: 10 minutes

 

Ingredients

    • 4 eggs
    • 100g fresh spinach
    • 1 green chilli, sliced
    • 1 red chilli, sliced
    • 3 tsp olive oil

 

Procedure

1. Whisk the eggs in a mixing bowl and season with a little salt and pepper.

2. Chop the spinach, and chillies.

3. Heat the oil in a non-stick frying pan and add the spinach and chillies.

4. Cook for 1 minute and then add the whisked eggs.

5. Cook on a high heat turning the pan to cook the egg evenly.

6. Fold the omelette in half once it has started to take shape.

7. Continue to cook for 1 more minute and remove from the heat.

8. Serve immediately with a side salad.
